Rustic sausage, potato and egg stew ๐Ÿณ๐ŸŒถ๏ธ

Ingredients:

5 sausages (homemade or smoked)

4 medium potatoes, peeled and diced

1 large onion, chopped

2 cloves of garlic

400 g tomatoes in broth

1 tablespoon tomato paste

1 large egg

2 tablespoons oil

salt, pepper, paprika, green parsley

Preparation:


1๏ธโƒฃ Fry the onion and garlic in oil until golden.


2๏ธโƒฃ Add the sliced and whole sausages, brown lightly.


3๏ธโƒฃ Add the potatoes, tomatoes, paste, salt, pepper, paprika and a little water. Boil for 20โ€“25 min covered.


4๏ธโƒฃ Crack the egg into the middle of the pan and cook it covered until the white sets.

Decoration and Serving:
Sprinkle with fresh parsley. Serve warm with fresh bread.
