Ingredients:

๐ฌ 100 g sugar
๐ฅ 200 ml milk + 1 tablespoon

๐ฅ 420 ml heavy cream (33โ36% fat), well chilled
Instructions:
Prepare the custard base:
In a medium saucepan or heat-resistant bowl, whisk the egg yolks with the sugar until the mixture becomes pale and creamy. This step is essential for a silky texture in the final product.
Add the milk:
Gradually pour in the milk and mix well. Place the mixture over low heat and cook gently, stirring constantly, until itโs just about to boil. Do not let it reach a full boil, as this could scramble the eggs.

Whip the cream:
While the chocolate base cools, whip the cold heavy cream until it forms firm peaks. Be careful not to overwhip.
Combine:
Gently fold the whipped cream into the cooled chocolate mixture using a spatula. Take your time with this stepโfolding slowly will help keep the mixture light and airy.
Pour and garnish:
