A light and elegant French dessert layered with flaky pastry, airy whipped cream, and fresh raspberries.

Ingredients:

1 pack puff pastry (500 g / 17 oz)

200 g (7 oz) fresh raspberries

300 ml (1 1/4 cups) cold heavy whipping cream (unsweetened)

2 tablespoons powdered sugar

1 sachet (8 g) vanilla sugar (or 1 teaspoon vanilla extract)

Extra powdered sugar for dusting

Instructions:

Step 1: Bake the Puff Pastry Layers


Preheat your oven to 200ยฐC (390ยฐF).
Unroll or roll out your puff pastry on a lightly floured surface. Cut it into three equal rectangles, each approximately 20×30 cm (8×12 inches).


Place the sheets on baking trays lined with parchment paper. To prevent puffing, prick the pastry with a fork all over and optionally place another tray on top.
Bake each sheet for 12โ€“15 minutes, or until golden brown and crisp. Let them cool completely on a wire rack.

Step 2: Whip the Cream
In a large mixing bowl, combine the cold heavy cream, powdered sugar, and vanilla sugar (or vanilla extract).


Using a hand mixer or stand mixer, beat the cream until stiff peaks form. Be careful not to overmix.
Refrigerate the whipped cream until youโ€™re ready to assemble the dessert.

Step 3: Assemble the Mille-Feuille
On a serving tray, place one sheet of baked puff pastry. Spread a layer of whipped cream evenly on top, then scatter a layer of fresh raspberries over the cream.


Add the second sheet of puff pastry and repeat the process: whipped cream and raspberries.
Top with the final sheet of pastry. Press down very gently to keep the layers together without crushing the cream.

Step 4: Decorate and Serve
Dust the top layer generously with powdered sugar. Optionally, add a few extra raspberries for a fresh, colorful garnish.


Refrigerate for at least 1 hour before serving, to allow the layers to set slightly and the flavors to blend.
Slice carefully with a serrated knife for clean portions.
