Golden Meat Pie with Rice, Vegetables, and Cheese
Ingredients:
For the Dough:
3 cups all-purpose flour
1/2 cup butter (cold, cubed)
1/4 cup vegetable oil
1/2 teaspoon salt
1 large egg
1/2 cup cold water (as needed)
For the Filling:
500 g (1 lb) ground beef
1 small onion, finely chopped
1/2 cup cooked rice
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1 garlic clove, minced
1 teaspoon paprika
1/2 teaspoon black pepper
1/2 teaspoon salt
2 tablespoons oil for cooking
1/2 cup shredded mozzarella or cubed cheese (optional but recommended)
Fresh parsley, chopped (optional)
For the Glaze:
- 1 egg yolk + 1 tablespoon milk (for brushing)
Instructions:
1. Prepare the Dough:
In a large bowl, mix flour and salt.
Add the cold butter and rub it into the flour until crumbly.
Add oil and the egg, mix lightly.
Gradually add cold water, kneading until you get a smooth, elastic dough.
Divide dough into 2 portions โ one slightly larger for the base, the other for the top.
Cover and refrigerate while you prepare the filling.
2. Prepare the Filling:
In a skillet, heat oil and sautรฉ onion and garlic until soft.
Add ground beef, cook until browned and fully cooked.
Stir in bell peppers, paprika, salt, and pepper. Cook until softened (about 5โ7 minutes).
Remove from heat and mix in cooked rice and parsley (if using).
Let it cool slightly, then stir in cheese if using.
3. Assemble the Pie:
Preheat oven to 180ยฐC (350ยฐF).
Roll out the larger dough portion and place it into a greased round baking dish or springform pan.
Add the meat filling and spread evenly.
Roll out the remaining dough and cover the pie, sealing the edges by pinching or pressing with a fork.
Cut a few slits or holes in the top to release steam.
Brush the top with the egg wash.
4. Bake:
Bake for 40โ45 minutes or until the crust is golden and crisp.
5. Cool and Serve:
Let the pie rest for 10 minutes before slicing. Serve warm as a hearty main dish.
