Fluffy Apple Cake with Vanilla Cream and Chocolate Glaze

This soft apple cake, with airy sponge layers and silky vanilla cream, topped with a glossy chocolate glaze, is a real treat for any occasion. It combines the freshness of apples with the subtle sweetness of cream and the intense flavor of chocolate โ€“ a classic dessert with a delicious twist!

Ingredients for the sponge cake:

6 eggs

120 g (1 cup) flour

120 g (1 cup) powdered sugar

10 g (1 tbsp) cocoa powder

10 ml (1 tbsp) rum extract

1 kg (2.2 lbs) apples

Ingredients for the cream:

200 g (7 oz) margarine

200 g (1 cup) powdered sugar

1 packet vanilla pudding powder (approx. 40 g / 1.4 oz)

350 ml (1ยฝ cups) milk

Ingredients for the chocolate glaze:

80 g (โ…“ cup) sugar

15 g (3 tbsp) cocoa powder

3 tbsp water

70 g (5 tbsp) butter
Optional:

50 g (1.7 oz) dark chocolate + 1โ€“2 tbsp milk, for a more intense glaze

Instructions:

Line a medium-sized baking tray (approx. 21 x 37 cm / 8 x 14.5 in) with foil and lightly grease with butter.

Peel and thinly slice the apples (a grater works best). Spread them evenly in the tray over the foil.

Prepare the sponge:

3. Beat the egg whites with powdered sugar until stiff peaks form.
4. Add the yolks one by one, gently mixing after each.
5. Sift in the flour and fold gently to keep the batter airy.
6. Pour half the batter over the apples.


7. Mix the remaining batter with cocoa and rum, then pour it over the white layer.
8. Level and bake at 175โ€“180ยฐC (350ยฐF) with fan for 25โ€“30 minutes.
9. After baking, flip the cake onto a board so the apple layer is on top. Let it cool.

Prepare the cream:


10. Cook the pudding with the milk until thick, then let it cool, stirring occasionally.
11. Beat the margarine with powdered sugar until fluffy, then mix in the cooled pudding.
12. Spread the cream evenly over the cake.

Prepare the glaze:


13. Mix sugar, cocoa, and water in a saucepan and heat gently until fully dissolved.
14. Add the butter and (optional) dark chocolate and milk. Stir until glossy and smooth.
15. Pour the glaze over the cream layer.
