Ingredients:
For the meatloaf:
2 lbs ground beef (80/20)
1 cup breadcrumbs
1 medium onion, finely chopped
2 cloves garlic, minced
2 eggs
ยฝ cup milk
ยผ cup ketchup
2 tsp Worcestershire sauce
1 tsp salt
ยฝ tsp black pepper
1 tsp dried thyme
For the glaze:
ยผ cup ketchup
2 tbsp brown sugar
1 tbsp Dijon mustard
For the mashed potatoes:
2 lbs russet potatoes, peeled and chopped
ยฝ cup unsalted butter
ยพ cup whole milk (or more, to taste)
Salt and pepper to taste
Instructions:
Preheat oven to 375ยฐF (190ยฐC). Line a loaf pan with parchment or grease it lightly.
Make the meatloaf mixture: In a large bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, and thyme. Mix gently with your hands or a spatula until just combined.
Form and bake: Shape into a loaf and place in the prepared pan. In a small bowl, mix glaze ingredients and spread evenly on top. Bake for 55โ60 minutes or until internal temperature reaches 160ยฐF (71ยฐC). Let rest for 10 minutes before slicing.
