Blackberry Cake with Vanilla Cream ๐๐ฐ
Ingredients
For the sponge cake:
4 eggs
120 g sugar
80 g flour
30 g dark cocoa powder
For the vanilla cream:
300 ml milk
3 tbsp cornstarch
80 g sugar
150 g butter
Vanilla extract
For the filling:
250 g fresh blackberries or blackberry jam
For the glaze:
100 g white chocolate
A few drops of purple food coloring
50 ml heavy cream
Instructions
1๏ธโฃ Bake the sponge cake in a round pan at 180ยฐC (350ยฐF) for 25โ30 minutes. Once cooled, slice it into 3 layers.
2๏ธโฃ Prepare the cream: cook the milk, cornstarch, and sugar until thickened. Let cool completely, then mix in the butter and vanilla until smooth.
3๏ธโฃ Assemble the cake: layer the sponge with vanilla cream and fresh blackberries (or jam) between each tier.
4๏ธโฃ Make the glaze: melt the white chocolate with the cream, add purple coloring, and pour over the top of the cake.
Decoration & Serving:
Decorate with fresh blackberries and purple meringues. Chill thoroughly before serving.
