Ingredients:
For the filling:
1 tablespoon butter (15 g)
2 apples (about 300 g, peeled and grated)
2 tablespoons sugar (30 g)
2 tablespoons apricot jam (40 g)
For the dough:
2 eggs
50 g sugar
A pinch of salt
80 ml vegetable oil
300โ320 g flour
8 g baking powder
For the glaze:
1 egg white
80 g powdered sugar
2 tablespoons apricot jam (40 g)
Instructions:
Filling:
In a pan, melt the butter, then add the grated apples and sugar. Cook over low heat until the apples soften and the liquid evaporates. Finally, stir in the apricot jam, mix well, and allow the filling to cool completely.
Dough:
In a large bowl, beat the eggs with the sugar and a pinch of salt. Add the oil, then gradually incorporate the flour mixed with the baking powder. Knead until you get a soft, elastic, non-sticky dough. Divide it into two equal parts.
Assembly:
Roll out the first half of the dough and place it in a round baking tin (22 cm diameter), greased with butter. Spread a thin layer of apricot jam over the dough, then distribute the cooled apple filling evenly. Roll out the second half of the dough and place it on top of the filling. Seal the edges and gently prick the surface with a fork.
Glaze:
Beat the egg white until foamy, gradually adding the powdered sugar. When the mixture becomes glossy and thick, spread it evenly over the pie. Optionally, add a few dots of apricot jam on top and swirl for a marbled effect.
Baking:
