Ingredients for 12 muffins:

๐Ÿฅš 3 medium eggs
๐Ÿฌ 150 g sugar
๐Ÿ‹ 60 ml lemon juice
๐Ÿ›ข๏ธ 70 ml oil
๐ŸŒพ 180 g flou
๐ŸŒฝ 50 g cornstarch (or substitute with flour)
๐Ÿฅ„ 1 teaspoon baking powder
๐Ÿฅ„ 1/4 teaspoon baking soda
๐Ÿ‹ Zest of 1 lemon
๐Ÿง‚ A pinch of salt
๐Ÿจ 1 teaspoon vanilla sugar
๐ŸŒ• 1/4 teaspoon turmeric (optional, for color)

Filling:

๐Ÿ“ Fruit jam (cranberry, raspberry, currant, blueberry, etc.)

Glaze:

๐Ÿฌ 2 tablespoons powdered sugar
๐Ÿ‹ 1 tablespoon lemon juice

Instructions:

Beat the eggs with a pinch of salt for 1 minute, then add the granulated sugar, vanilla sugar, lemon zest, and turmeric.

Continue mixing for 2โ€“3 minutes until the sugar dissolves. Add the lemon juice and oil, then mix for another 10 seconds.

Gradually incorporate the sifted flour mixed with cornstarch, baking powder, and baking soda in 3 additions. Gently stir until the batter is smooth. The batter should flow slowly off the spatula.

Fill the muffin molds (lined or greased) up to 2/3 full. Bake in a preheated oven at 170โ€“180ยฐC (340โ€“355ยฐF) for about 20 minutes, or until they pass the toothpick test. Let them cool completely.

For the filling, cut out the center of each muffin and add a bit of jam.
For the glaze, mix powdered sugar with lemon juice until you get a thick consistency, then decorate using a piping bag.
