Recipe 1: Turkish-Style Zucchini Delight

Ingredients:

2 zucchinis

Salt and black pepper to taste

Ground coriander (optional)

4 eggs

2–3 tbsp sour cream or plain yogurt

3–4 tbsp cornstarch

Shredded cheese (any type, to taste)

Meat seasoning, to taste

Dried parsley, to taste

Paprika, to taste

Mustard, to taste

Garlic, to taste

Fresh or dried herbs (e.g. dill), to taste

Oil for frying

Instructions:

Slice the zucchinis and season with salt, pepper, and coriander. Let sit for 5–10 minutes.

In a bowl, whisk the eggs with sour cream/yogurt and cornstarch until smooth.

Add shredded cheese, meat seasoning, dried parsley, paprika, mustard, garlic, and herbs. Mix well.

Combine the zucchini with the mixture.

Fry in hot oil over medium-high heat until golden on both sides.

Ingredients:

2 zucchinis

Salt and pepper to taste

1 onion

1 tomato

1 tbsp tomato paste

3 eggs

150 g thick yogurt or sour cream

100 g flour

Instructions:

Slice and season the zucchinis with salt and pepper.

Finely chop the onion, pepper, and tomato, and sauté in olive oil.

Add tomato paste and water, let simmer briefly.

In a bowl, whisk the eggs, add yogurt and flour, mix until smooth.

4 zucchinis

10 g baking powder

120 g mozzarella

For the sauce:

2 tbsp thick yogurt or sour cream

2 tbsp mayonnaise

Chopped green onion

1 garlic clove

Juice from half a lemon

Instructions:

Slice and salt the zucchinis, set aside.

Chop the onion, carrot, and peppers; sauté in olive oil.

In a bowl, beat the eggs, then add milk, flour, and baking powder. Stir in the vegetables and parsley.

Pour into a baking dish, top with shredded mozzarella, and bake at 180°C (350°F) for 35–40 minutes.

For the sauce, mix yogurt, mayonnaise, chopped green onion, garlic, and lemon juice.
