🥒 Savory Zucchini, Potato & Cheese Bake – Light, Tasty, and Wholesome!

A simple, nourishing recipe that’s perfect for a light dinner, a quick lunch, or even a picnic! The combination of zucchini, potatoes, and cheese creates a soft texture and a rich, comforting flavor.

🛒 Ingredients:

2 medium zucchinis, sliced into rounds

2 tablespoons olive oil

1 teaspoon salt (divided)

1 teaspoon black pepper (divided)

4 eggs

1 teaspoon sugar

60 ml (¼ cup) vegetable oil

100 ml (½ cup) milk

120 g (1 cup) all-purpose flour

11 g (2 teaspoons) baking powder

1 medium potato, peeled and grated

1 medium onion, finely chopped

2 tablespoons grated Parmesan (plus extra for topping)

2 tablespoons soft cream cheese

👩‍🍳 Instructions:

1. Prepare the Zucchini

Sauté the zucchini slices in olive oil with half of the salt and pepper.
Cook for about 2 minutes, then set aside.

2. Make the Batter

In a bowl, beat the eggs until smooth.
Add the remaining salt, pepper, sugar, vegetable oil, and milk. Mix well.
Gradually whisk in the flour and baking powder until the batter is smooth and lump-free.

3. Add the Vegetables

Squeeze the grated potato to remove excess moisture.
Add it to the batter along with the chopped onion, cream cheese, and Parmesan. Mix to combine.

4. Assemble the Bake

Preheat the oven to 180°C (350°F).
Line a baking dish with parchment paper or lightly grease it.
Layer some of the zucchini slices at the bottom.
Pour in half the batter, then spoon over a few dollops of cream cheese.
Add another layer of zucchini slices and pour the remaining batter on top.
Sprinkle more Parmesan over the top.

5. Bake

Bake for 40–45 minutes or until golden brown and a toothpick comes out clean.

6. Serve

Let it cool for 10 minutes before slicing.
Serve warm – with a fresh salad or a slice of crusty bread.
