Ingredients
1 kg (2.2 lbs) boneless pork neck
1 green onion
1 carrot
3 large garlic cloves
Salt
Pepper
Sweet paprika
Dried thyme
1 tablespoon tomato paste
Preparation
Wash the meat, pat it dry with a paper towel, then cut it into medium-thick slices.
Clean the green onion—slice the green stalks into rounds and cut the white part into medium pieces.
Peel the carrot and cut it into slices. Peel the garlic and slice it thinly.
Place the pork pieces in a baking dish, then add the green onion, carrot slices, and garlic.
Season with salt, pepper, sweet paprika, and a bit of dried thyme.
In a small bowl, mix the tomato paste with 1½ cups of water. Stir well.
Pour this mixture evenly over the meat and vegetables in the pan.
Cover the dish with aluminum foil and place it in a preheated oven at medium temperature. Bake for 1 hour and 30 minutes.
After this time, remove the foil and let it cook uncovered for another 15–20 minutes, increasing the oven temperature slightly until nicely browned.
Once done, remove from the oven and serve.
