๐Ÿ”ธ Ingredients (for approx. 4 jars of 800 ml each):

2 kg ripe (but firm) tomatoes, sliced

500 g bell peppers (red, yellow, or green), cut into strips

500 g cucumbers (optional, thinly sliced)

2 large onions (white or red), julienned

1 large carrot, grated or thinly sliced

3โ€“4 garlic cloves, sliced

1 bunch fresh parsley, finely chopped

1 tbsp mustard seeds (optional)

Peppercorns, bay leaves (for each jar)

๐Ÿ”ธ For the marinade:

1 liter water

300 ml vinegar (9%)

100 g sugar

50 g non-iodized pickling salt

๐Ÿ”ธ Preparation:

Wash all the vegetables thoroughly.

Slice the tomatoes into thick slices (~1 cm).

Cut the onions, carrots, peppers, and cucumbers as indicated.

In a large bowl, mix all the vegetables and add the garlic and parsley.

Wash the jars and lids.

Sterilize the jars in the oven (10โ€“15 min at 100ยฐC) or by boiling them.

In a pot, bring the water, vinegar, salt, and sugar to a boil.

Let it boil for 2โ€“3 minutes, then remove from heat.

In each jar, place a few peppercorns, a little mustard seed, and a bay leaf.

Add the vegetables in layers, pressing them down gently with a spoon.

Pour the hot marinade over the vegetables, filling the jars but leaving ~1 cm of space at the top.

Seal the jars tightly.

๐Ÿ”ธ Final sterilization (optional, but recommended):

Place the jars in a large pot lined with a towel.

Boil for 20โ€“25 minutes after the water starts bubbling.

Remove the jars, cover them with a blanket, and let them cool slowly until the next day.

For a more intense flavor, add a few celery or horseradish leaves.

Store in a pantry, in a cool and dark place.
