Servings: 12
Prep time: under 120 minutes
INSTRUCTIONS
Preparing the cake layers:
Preheat the oven to 180°C (350°F). Grease two 23 cm (9-inch) round cake pans with butter and line them with parchment paper.
In a large bowl, sift together the flour, sugar, baking soda, baking powder, salt, and cocoa powder. Mix the dry ingredients well.
In another bowl, whisk together the oil, buttermilk, eggs, vinegar, vanilla extract, and red food coloring until smooth.
Gradually add the dry ingredients to the wet mixture, mixing on medium speed until the batter is smooth and fully combined.
Divide the batter evenly between the two prepared pans.
Bake in the preheated oven for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake layers cool in the pans for 10 minutes, then remove them and place on a wire rack to cool completely.
Preparing the cream cheese frosting:
In a large bowl, beat the cream cheese and butter with a mixer on medium speed until smooth and creamy.
Add the vanilla extract and gradually mix in the powdered sugar, beating continuously until the frosting is fluffy and well combined.
Assembling the cake:
If the cake layers have uneven tops, trim them to level.
Place one cake layer on a serving platter and spread a generous layer of cream cheese frosting on top.
Add the second layer and spread the remaining frosting over the top and sides of the cake.
Decorate as desired—using red velvet cake crumbs (from trimming) or other decorations.
Serving:
Refrigerate the cake for at least one hour before serving to allow the frosting to set slightly.
