If you love pancakes but want something quick, fluffy, and just a bit different, this American buttermilk pancake recipe is exactly what you need! The secret? Buttermilk (or kefir), which gives them a soft, airy texture—perfect for a weekend breakfast or a sweet, satisfying brunch.

Ingredients:

320 g all-purpose flour

2 tablespoons sugar (approx. 30 g)

2 heaping teaspoons baking powder (approx. 10 g)

1 teaspoon baking soda (approx. 5 g)

½ teaspoon salt (approx. 2 g)

500 ml buttermilk (or kefir)

2 eggs

75 ml sunflower oil (plus 1 tablespoon for cooking)

Instructions:

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Add the eggs, buttermilk, and oil. Stir just until the ingredients are combined—it’s perfectly fine if a few lumps remain. Don’t overmix!

Heat a non-stick skillet and lightly grease it with a bit of oil.

Pour about 2 tablespoons of batter into the center of the pan and gently spread it to form a circle about 8–10 cm (3–4 inches) wide.

Cook the pancake for 2–3 minutes, until bubbles appear on the surface. Flip and cook for another 2–3 minutes, until golden brown.

Serve immediately while warm and soft.
