Classic Meatloaf with Mashed Potatoes

Ingredients:

For the meatloaf:

2 lbs ground beef (80/20)

1 cup breadcrumbs

1 medium onion, finely chopped

2 cloves garlic, minced

2 eggs

½ cup milk

¼ cup ketchup

2 tsp Worcestershire sauce

1 tsp salt

½ tsp black pepper

1 tsp dried thyme

For the glaze:

¼ cup ketchup

2 tbsp brown sugar

1 tbsp Dijon mustard

For the mashed potatoes:

2 lbs russet potatoes, peeled and chopped

½ cup unsalted butter

¾ cup whole milk (or more, to taste)

Salt and pepper to taste

Instructions:

Preheat oven to 375°F (190°C). Line a loaf pan with parchment or grease it lightly.

Make the meatloaf mixture: In a large bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, and thyme. Mix gently with your hands or a spatula until just combined.

Form and bake: Shape into a loaf and place in the prepared pan. In a small bowl, mix glaze ingredients and spread evenly on top. Bake for 55–60 minutes or until internal temperature reaches 160°F (71°C). Let rest for 10 minutes before slicing.

Prepare mashed potatoes: Boil potatoes in salted water for 15–20 minutes until tender. Drain and return to the pot. Add butter and warm milk, then mash until smooth and fluffy. Season with salt and pepper to taste.

Serve: Slice meatloaf and serve with a generous scoop of mashed potatoes. Pairs well with green beans or steamed carrots.
