📝 Ingredients
For the brownie base:
200 g (1 ⅔ cups) all-purpose flour
250 g (1 ¼ cups) sugar
200 g (¾ cup + 2 tbsp) butter (82% fat), softened
150 ml (⅔ cup) milk
5 eggs
50 g (½ cup) unsweetened cocoa powder
1 tsp rum extract
7 g (1 packet) baking powder
150 g (1 ½ cups) ground walnuts
A pinch of salt
For the glaze:
250 g (9 oz) dark chocolate (preferably 60–70% cocoa)
50 ml (3 tbsp + 1 tsp) heavy cream (for whipping)
👩🍳 Instructions
1. Prepare the brownie batter:
- In a large bowl, beat the eggs with the sugar and a pinch of salt until light, fluffy, and creamy in texture.
- Add the softened butter and mix well until incorporated.
- Pour in the milk and rum extract, stirring gently.
- In a separate bowl, combine the flour, cocoa powder, baking powder, and ground walnuts. Gradually fold the dry mixture into the wet ingredients, mixing until smooth and slightly thick.
2. Baking:
- Pour the batter into a baking pan (approximately 30×20 cm / 12×8 inches) lined with parchment paper.
- Bake in a preheated oven at 180°C (350°F) for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely before glazing.
3. Make the chocolate glaze:
- In a saucepan or over a bain-marie, gently melt the dark chocolate with the cream, stirring constantly until smooth, glossy, and silky.
- Pour the glaze over the cooled brownie and spread it evenly using a spatula.
Optional: Sprinkle with ground walnuts or chocolate flakes for a decorative finish.
✨ Final Result?
A dense, slightly moist brownie bursting with rich chocolate flavor, wrapped in a velvety chocolate glaze. Each slice is an irresistible indulgence – perfect alongside a cup of coffee or a glass of cold milk.
💡 Serving Tip:
Refrigerate the brownie for at least 2 hours before slicing. The flavor deepens, and the texture becomes firmer and even more satisfying.
