Brownie cheesecake is an absolutely delicious dessert featuring a rich, moist chocolate base and swirls of creamy ricotta and mascarpone that perfectly complement its flavor. For years, I avoided cheesecake—I’m not sure why—but this recipe changed everything. After trying this brownie cheesecake, I finally gave classic cheesecake a shot and fell in love with it too.

If you’re a fan of chocolate and want to experience a cheesecake twist, this recipe is a must. It’s easier to make than it looks, and the result is incredible.

🧁 Brownie Cheesecake – Ingredients (for a 28×24 cm / 11×9 inch pan)

For the Chocolate Brownie Base:

6 eggs

250 g dark chocolate

250 g unsalted butter

150 g all-purpose flour

350 g sugar

1 teaspoon baking powder

A pinch of salt

For the Ricotta & Mascarpone Cream:

150 g ricotta (well-drained)

100 g mascarpone

1 medium egg

25 g flour

2 packets vanilla sugar (or 2 tsp vanilla extract)

50 g sugar

👩‍🍳 How to Make Brownie Cheesecake

Step 1: Prepare the Ricotta & Mascarpone Cream

In a mixing bowl, combine the ricotta, mascarpone, egg, sugar, vanilla sugar, and flour. Mix until smooth and creamy.
Place the cream in the fridge while you prepare the brownie base.

Step 2: Make the Brownie Batter

In a small saucepan, melt the butter and dark chocolate together using the bain-marie (double boiler) method. Stir gently until completely melted and smooth.

In a separate bowl, beat the eggs with the sugar for about 4 minutes until the mixture becomes pale and doubles in volume.

Remove the chocolate mixture from the heat and gently fold in the beaten eggs.

Next, add the flour, baking powder, and salt, and mix until fully combined.

Step 3: Assemble and Bake

Grease and flour your baking pan (or line it with parchment paper). Pour the brownie batter into the prepared pan and smooth it out evenly.

Using a spoon, drop the cream cheese mixture over the batter in various spots. Then, using a toothpick or skewer, gently swirl the cream into the chocolate batter for a marbled effect.

Bake in a preheated oven at 180°C (350°F) for 25–30 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs.
