Ingredients:
For the crust:
200 g digestive biscuits
100 g melted butter
For the filling:
600 g cream cheese
200 g sugar
3 eggs
200 ml heavy cream
1 tsp vanilla extract
For the topping:
200 g fresh or frozen blueberries
2 tbsp sugar
1 tbsp lemon juice
Instructions:
1️⃣ Crush the biscuits, mix with melted butter, and press into a springform pan.
2️⃣ Beat the cream cheese with sugar, then add eggs, heavy cream, and vanilla.
3️⃣ Pour the mixture over the crust and bake at 160°C (320°F) for 45–50 minutes.
